docs: point the theme folder references at Jio, not Jio-theme

The mechanical rename turned AKSRT-theme into Jio-theme, but the
directory itself is Jio. Fix the three places that name the folder
(README install steps and tree, wp-cli-visual-fixtures usage comment,
DocsPage docs deep-link) and rebuild the SPA bundle.
